Healthy Quiche with Sweet Potato Base

-1 large sweet potato cut into thin round slices

-6-7 eggs whisked

– fresh basil and chives diced

– 1/2 yellow pepper diced

– 1/4 tsp paprika

– sea salt and pepper to taste

* feel free to add any veggies that you like, be creative!



Preheat the oven to 350 degrees

Cut sweet potato into thin round slices and line a pie plate with these

In a separate bowl, whisk together the rest of the ingredients

Pour the egg mixture over top the sweet potatoes and bake for about25-30 minutes or until the quiche is firm to the touch
